Author Nina Simonds says frozen and pre-cut veggies save time. So does meat, shredded from a rotisserie chicken, a roast or any other cooked meat.
Throw ginger, garlic, and scallions in oil, followed by the other ingredients — careful not to overcrowd the pan. Chicken broth, white wine, and other flavorings to finish it off.
