JALAPENO (Dirty Martini)
from luxury cocktail lounge, The Pool Lounge, Manhattan

Jalapeño by Thomas Waugh (The Pool Lounge)

1 ½ oz Jalapeño-Infused El Tesoro Platinum

1 oz Fortaleza Reposado

¾ oz Cocchi Americano

¾ oz Fino Sherry

3 Cucumber Wheels (lightly muddled)

2 Dashes Saline Solution

Muddle cucumber and saline in a shaker. Add rest of ingredients. Pour into a mixing glass and stir. Fine strain into a Martini glass. Garnish with half Serrano chili with stem on.

"The base idea of this drink came from a colleague's drink called the 'Chin Up'. It is a rare instance where you see fresh muddled cucumber in a stir/boozy format drink. I wanted to take the concept even further by making a stirred and spicy cocktail (also not very common). What came out was sort of a dirty martini with a tequila base and dry sherry in addition to dry vermouth."


2 oz. Chandon Rosé

1 ½ oz. hibiscus kombucha

½ oz. Meyer lemon-liqueur

3 drops strawberry-rhubarb bitters

Pour the kombucha, lemon-liqueur and bitters into a flute. Top with ChandonRosé.
