Ritzy Chicken Casserole
I don’t know about y’all, but after all the parties and rich foods during the holiday season, I’m oh-so-ready for some basic comfort foods. This simple to prepare chicken casserole is a perfect choice. My daughter-in-law fixed this casserole for dinner one night a couple of years ago when she had us out for dinner and it’s become a family favorite. The buttery crunch of the cracker topping is the perfect companion for the creamy chicken filling. I hope you and your family will enjoy it as much as we do.
2 cans cream of chicken soup
2 cups diced (stewed) chicken breast
1-2 tablespoons of poppy seeds
1 sleeve of Ritz crackers, coarsely crushed
1 stick of butter, melted
Blend the cream of chicken soup and the sour cream. Add the diced chicken and the poppy seeds; stir together gently. Put the mixture into a 13x9x2 pan that’s been sprayed with Pam.
Crush the Ritz crackers in a freezer bag. Melt the butter and stir into the cracker crumbs. Spread on top of the chicken mixture. Bake uncovered at 325° for about 25-30 minutes or until the cracker crumbs are golden brown and the chicken mixture is bubbling.
