I love to take favorite recipes and put a new twist on them. During these weeks of hot summer weather, I think you’ll love these frozen treats that combine the flavors of peanut butter pie and chocolate. I mean, how can you go wrong with that? I hope your family enjoys them.
I also hope you’ll stop by and visit me on my Facebook page, on Twitter @michelleinspire, and my blog for encouragement with a southern drawl, recipes, helpful tips, and inspirational stories.
8 oz. cream cheese, softened
1 cup peanut butter (I used creamy peanut butter)
1 cup (10X) powdered sugar
4 oz. Cool Whip
9 oz. pkg. chocolate wafer cookies
Beat the cream cheese until fluffy. Add the peanut butter; blend well. Add the powdered sugar and then add the Cool Whip. Mix until everything is blended. Place a heaping tablespoon of the peanut butter filling on top of a chocolate wafer. Top with another chocolate wafer. Press down lightly so the filling won’t squish out! Continue until all the cookies and filling are used. Place on a cookie sheet that has been lined with wax paper. Cover and freeze overnight. Serve frozen.
*The chocolate wafer cookies are usually found with the ice cream toppings. You could also use graham crackers in place of the wafers.
