I have some of the coolest friends on the planet and I love introducing you to them. My friend, Deborah Raney, is one of my favorite authors and she also has a gift for decorating and cooking. She posted a photo of her granola on awhile back and it looked so good that I asked her if she’d mind to share the recipe with us.

4 Cup Old Fashioned Oats
½ Cup Chopped Pecans, Walnuts, or Cashews
¼ Cup Shelled Sunflower Seeds
1 Cup Flaked Coconut
½ Cup Brown Sugar
½ Cup Olive Oil
½ Cup Honey
1 Teaspoon Vanilla
In a 9×13 pan, bake dry oats at 350 degrees for 10 minutes. Meanwhile, mix nuts, coconut, sunflower seeds and brown sugar in large mixing bowl; stir well.
In a small bowl, mix oil, honey, and vanilla. Remove oats from oven and add to nut mixture. Pour oil and honey mixture over all, stirring well. Return to 9×13 pan and bake at 350 degrees for 20-25 minutes till golden brown, stirring every 5 minutes. Cool. (Bake ½ batch for only 15 minutes. Stir again several times while cooling as it tends to clump.)
Store in zip-lock bag. Enjoy!
